Chocolate Covered Strawberry Brownies - Valentine's Edition

Some desserts just ask to be dressed up for Valentine’s Day.
These Chocolate Covered Strawberry Brownies already created a big hype since I first introduced them on Instagram as a reel — rich, fudgy, layered with fresh strawberries and finished with a smooth chocolate ganache topping. But for Valentine’s Day, I wanted something a little softer. A little more romantic. A little pink.
So instead of the classic dark chocolate layer on top, I made a white chocolate ganache and tinted it the prettiest pink.
And honestly? It completely changes the energy of the dessert.
Same Brownie: Different Mood
The base is exactly the same asI suggested originally: either a box mix brownie, or your favorite brownie recipe, as long as it is in an 8-in x 8-in square pan — topped with fresh strawberries. (You can find all the step-by-step details in the original post.)
But this version feels lighter and more playful. The pink ganache gives it that unmistakable Valentine’s Day feel without needing sprinkles, candy hearts, or anything over the top. But, if you wanted to take that extra step, you can go ahead and do that, while the ganache is still yet, so that the sprinkles stick in place.
Just glossy pink chocolate poured over bright red strawberries. Simple. Romantic. Slightly dramatic. Totally delicious.
Why the white chocolate
White chocolate brings a different kind of sweetness. It’s creamier and softer in flavor compared to dark chocolate, which allows the strawberries to stand out even more. And it really does change the experience in your taste buds.
And once you tint it pink, it becomes elegant without trying too hard. It is perfect for Valentine's or Galentine's dessert tables. Or even if you want to treat your friends something sweet for this day. I always do. And to be honest, that's what happened to these brownies today: I packed them and gave them to my friends to wish them a Happy Valentine's Day.
I love recipes that can evolve like this. One base, two personalities. The original version is rich and classic. This pink Valentine’s version feels soft, romantic, and just a little playful.

Here is your shopping list for the Valentine's version of these brownies:

Brownie Box Mix (don't forget the ingredients you need to make the box mix)
Fresh Strawberries - 1-lb (500gr)
Good quality white chocolate - 2 cups (340gr)
Heavy Cream - 1 cup
How to make the brownies:
Bake your brownies, and let them completely cool.
Meanwhile, rinse all your strawberries. Dry well, and cut the stems off. Cut all of them in halves.
Arrange them, flat side down, on the brownies, in a way that the whole brownie pan is almost covered by strawberries.
Heat your heavy cream in a saucepan. You can also do this in the microwave, but I prefer the conventional way. If you are using a chocolate bar, break into small pieces. I used one and chopped it into small squares.
Add them to the warm heavy cream. I cover the pan with a towel to keep the heat inside - if you use the cover of the saucepan, you will most likely create humidity. Let it sit for 3-4 minutes, and give it a good stir until the chocolate is completely melted.
OPTIONAL: add a couple of drops of OIL BASED food coloring. Water based in white chocolate will seize the ganache. I used Colour Mill Hot Pink. 2 drops, that's it.
Pour the ganache on top of the strawberries and spread well.
