Chocolate Covered Strawberry Brownies

You read that correctly!! I took two of my favorite desserts and combined them! If you've been following me on social media awhile, then you probably know that I like to play around with brownie flavors a lot. The latest being my Chili Brownies. And with Valentine's Day around the corner, I decided to do something more "lovie-dovie." I added the chocolate covered strawberries.



These Chocolate Covered Strawberry Brownies are exactly what they sound like — a fudgy chocolate brownie base, topped with fresh strawberries, and finished with a silky layer of chocolate ganache on top. They look impressive. They taste even better. And the best part? They’re incredibly easy to make.



Brownies from a box taste delicious, and they come together pretty fast! And I wanted this recipe to be one of those show-stopper recipes you keep in your back pocket, that come together at a last minute's notice. Even though I am suggesting you use a boxed brownie mix, you are more than welcome to use your favorite brownie recipe. I actually went to the store to buy a brownie mix, but they were all out of the brand I usually get, and the alternative made a huge pan, and I didn't want to play around with quantities. So I went back to my trusted fudgy recipe instead. Just make sure you use an 8-in x 8-in pan so that the topping comes out enough.


Here is your shopping list for these brownies:


a square pan with baked brownies, strawberries in a sieve, a cup of heavy cream and a cup of chocolate chips
  • Brownie Box Mix (don't forget the ingredients you need to make the box mix)

  • Fresh Strawberries - 1-lb (500gr)

  • Good quality dark chocolate - 2 cups (340gr)

  • Heavy Cream - 1 cup


How to make the brownies:


Bake your brownies, and let them completely cool.

Meanwhile, rinse all your strawberries. Dry well, and cut the stems off. Cut all of them in halves.

Arrange them, flat side down, on the brownies, in a way that the whole brownie pan is almost covered by strawberries.

Heat your heavy cream in a saucepan. You can also do this in the microwave, but I prefer the conventional way. If you are using a chocolate bar, break into small pieces. I used chocolate chips.



Add them to the warm heavy cream. I cover the pan with a towel to keep the heat inside - if you use the cover of the saucepan, you will most likely create humidity. Let it sit for 3-4 minutes, and give it a good stir until the chocolate is completely melted.

Pour the ganache on top of the strawberries and spread well.



Whether you use a boxed mix or your favorite homemade brownie recipe, this dessert is proof that sometimes layering simple things together creates something that feels extra special.
